Currently I run modified uprights, 330mm rotors and VY callipers (the Mr. Spares/UPC ebay big brake conversion)

The wheels I want to use are steel 17" items with 380mm of room inside.

(380 - 355)/2 = 12.5mm

So I need a calliper that won't add more than 10mm to the diameter (or radius, depending on which way you look at it) of the rotor. Even then that only leaves 2.5mm clearance between the calliper and the inside of the rim but that should be ok given the stiffness of these wheels.

Dog bones will be machined from billet to suit.

What can you recommend?

Cheers
Dog bone brackets will only work with a lug mounted caliper and 4 and 6 piston Brembo or AP Racing calipers are radial mounted so you get a more of a L angled bracket. We looked at running the 6 piston brembo caliper on a e series but the caliper fouled on the upright but i think the kit you have runs a larger offset so it may be possible although on the other hand i think most calipers in this area add about 20mm plus..
Can you copy/paste and PM me so i have a message here on Monday when i come into work and i can look for you. Also do you have a photo of the brake kit mounted up as i would like to see the offset change from the rear view.
