Default Carbie choice (???) on warm 2 litre (Ford Escort)

Hey, this is my first time posting and hoping you'll be of some help.

I've got myself a '79 Mk 2 Coupe with an RS2000's 2 litre installed. 60thou overbore, lumpy cam, lightened and balanced fly wheel, extractors.

My issue is that i'm running a standard downdraught weber with larger jets than usual. The car is running lean so I want an upgrade.

I've been told that a 350 holley, jetted down will do the job nicely - and it'll be a lot cheaper because i have the carb and adaptor plate etc already.
My gut tells me it's going to flood and be a waste of time.

I've been sussing out twin side carbs for it also, which appears to be the most expensive and most popular way to go - also understanding that I've got to put the battery in the boot etc etc.

Any other suggestions? I really want to feed what is looking like a hungry little engine.
