so where/how is almond milk from? not the same way they milk cows I know, but how?
Are the almonds soaked in water then pressed under pressure? If so then the quality of water will have a bearing on the quality.

Same question for soy (beans)

We used to make our own Soymilk when it wasn't so common in stores.

Soy is made by, soaking first, de-skinning the beans, blending with fresh water, straining mixture, heat and stir the mix until smooth.

The left over bean skins called Okara can be used as a flavouring while cooking other dishes, mixed with Kechap Manis adds bulk to vegetarian dishes.

Soy can further be boiled then, to make Tofu.
