Hi all you chefs out ther. A mate has just dropped off about 10 kilo's of red emporer that I am about to clean and fillet. I intend to do them in a beer batter, but feel like somthin different. Any suggestions??

Red Emporer is one of the best eating fish you can get, maybe along with coral trout. However you cook it dont spoil it with a heap of vegies and spicey sauces and other crap like the big cooks do... you wouldnt be able to taste the fish!

The way I like big fish is:
Get a small fire happening for an hour or two, so the coals are reallly hot, and red. Wrap the fish in either Banana leaves or alfoil, and in the middle of the fish, have cubes of butter, sliced lemon, and pepper and salt. Dig a little hole big enough for the fish, and fill the bottom with the coals. Put the fish in and cover it with coals. Keep on for halfa, check it, it should be lovely and white. Dig in.
